01 — THE STORY

Aurelia opened in 2019 in a converted stationer's shop on Ambergate Row, keeping the original brass fittings and the tall street-facing windows. We serve coffee the way it was served before speed became a virtue — weighed, timed, and poured with attention. Every espresso is pulled to order. Every filter coffee is brewed one cup at a time. There is no rush here, and there never will be.

Our beans are sourced in small, traceable lots from single estates in Ethiopia, Colombia, and Panama, roasted in micro-batches every Tuesday. We change the single-origin pour-over every three weeks so that no two visits taste quite the same.

We built a room where the clock feels optional.

The room

The shop still carries the scent of paper and ink on quiet mornings, before the first espresso. We kept the tall windows, the brass drawer pulls, and the worn oak floor. Soft seating faces the street; a handful of tables sit deeper in the room where the afternoon light lasts longest.

The craft

We weigh, bloom, and pour with the same care every time. Espresso is dialled in before the doors open. Filter coffee is never batch-brewed for the shelf — each cup is made when you ask for it. Milk is steamed to a soft gloss, never rushed into foam for show.

The people

Elena Marceau founded Aurelia after years behind bars that prized speed over flavour. The staff here learn the room before they learn the menu: how to leave a guest alone, how to remember a usual order, how to pour slowly when the morning allows it.
